Dextranase (EC 3.2.1.11) is an enzyme with systematic name 6-alpha-D-glucan 6-glucanohydrolase. Dextranase produced by the controlled fermentation of a Non-GMO Fungal Strain. This enzyme catalyses the Endohydrolysis of alpha-1,6-glucosidic linkages in dextran. Dextranase is a useful enzyme that catalyzes the degradation of dextran to low-molecular-weight fractions. dextranase plays an efficient role in food industries, such as molasses and beverage processing.
In sugar production, dextrans are undesirable compounds synthesized by contaminant microorganisms from sucrose, increasing the viscosity of the flow and reducing industrial recovery, bringing about significant losses. The use of the dextranase enzyme is the most efficient method for hydrolyzing the dextrans at sugar mills.
